Watermelon,Feta, and Basil Salad with Lime Viniagrette

I’ve been growing leaf lettuce, spinach, and other leafy greens in pots in the back yard.  As a result, salads have become a regular feature on our menu. Changing the cast of accompanying fruits and veggies becomes a necessity when you eat salad daily.  I try to use what is in season as much as possible.

This Watermelon, Feta, and Basil salad just says summer!  The watermelons are so juicy and sweet right now!  The basil vibrant and at the peak of flavor.  This salad touches on all the taste sensations, sweet, tangy, salty, and sour.  It’s is like a party in your mouth!

Watermelon,Feta, and Basil Salad with Lime Viniagrette

  • 6 cups salad greens, arugula, romaine, or spinach are good choices.
  • 4 cups watermelon, cubed with seeds removed
  • ¼ Cup fresh basil, chopped
  • 4 oz. Feta cheese, crumbled
  • 1/4 Cup sunflower seeds
  • sea salt and pepper to taste
  • For the Lime Vinaigrette
  • ¼ Cup lime juice, fresh squeezed is best
  • zest of ½ lime
  • 1 Tablespoon sugar
  • ¼ Cup olive oil
  • ¼ teaspoon pepper

  1. 1. Wash and chop greens and place in serving bowl. Add watermelon cubes, chopped fresh basil, crumbled Feta.
  2. 2. I like to use a jar with a top for making and storing salad dressings. I can just shake them instead of whisking. To jar with top add lime juice, zest, sugar, olive oil, and pepper. Shake well.
  3. 3. Pour dressing over salad just before serving and sprinkle with sunflower seeds.
